1/2 cup flour                           1/2 cup wheat flour
3 scoops protein powder                 3 teaspoons baking powder
2 eggs                                  2 teaspoons sugar
1 3/4 cups skim milk                    1/2 cup oil

Sift dry ingredients. Combine egg yolks, milk, and oil. Stir into
dry ingredients. Fold in beaten whites, leaving a few fluffs. Spoon
1/2 cup batter onto greased griddle. Bake 3 minutes. Makes 8.
Nutritional Analysis: 265 calories, 14 (48.2%)fat, 17 carbs, 18 protein.

Variation: omit sugar and add 1 cup mini chocolate chips to the 
batter. Makes 10. Serve with whipped cream and fruit/fruit spread.
Nutritional Analysis for waffles: 296 calories, 17 (50.2%)fat, 
24 carbs, 15 protein.

French Toast

1 egg                                   1/2 cup skim milk
nutmeg, to taste                        cinnamon, to taste
4 slices of bread

beat egg, milk, and spices in shallow bowl or pie pan. Dip bread in
mixture and place in warm pan-lightly greased or sprayed with nonstick
spray. Brown on both sides. Nutritional Analysis for 1 slice:
98 calories, 3 fat, 14 carbs, 5 protein.

Breakfast Pizza

2 packages of croissants                  8 eggs
cheddar cheese (grated)                   meat of choice
toppings of choice

Spread croissants out on a cookie sheet. Beat eggs and pour over
croissants. Sprinkle with cheese, meat, and toppings (canadian bacon
and mushrooms are good). Bake according to package directions until
done. Cut into 16 slices. Nutritional Analysis: calories, fat, and
protein depend on the toppings. Each slice has approximately 11 grams
of carbs.
